Domaine Bernard Defaix was established by its namesake in 1959 with only a tiny 2ha of vineyard space. In 2004, Bernard's sons, Sylvian & Didier, took the reigns and have been running the vineyard & winery ever since. Today, the winery is spread of 27ha and encompasses some of Chablis' most prestigious vineyards. The Domaine is now totally organic certified, meaning what you see in your glass is an authentic expression of Chablis. Pouring a pale yellow, this Chablis from 55-year-old vines greets you with aromas of fresh apple, honeysuckle, and a hint of lemon. On the palate, it's beautifully fresh, dry, and balanced; with gentle flavours of fresh apple and honeysuckle. At the same time, it has remarkable richness, depth, and complexity from the old vines, leading to a finish that grows & grows.
